🍂 Fall doesn’t mean your garden is done, it means it’s time to think ahead. Here in Western North Carolina, our first frost typically lands in mid to late October, which means the countdown for fall veggies actually starts now. Cool season crops like broccoli, collards, kale, lettuce, and spinach all do best when you count backward from that frost date and get seeds going while the soil is still warm enough to germinate.
The trick with starting seeds in August heat is soil temperature. Anything over 85°F can keep lettuce and spinach from sprouting at all, so a little extra care goes a long way. Planting seeds slightly deeper, keeping the bed consistently moist, and using a light mulch to hold in moisture and cool the surface can make the difference between a strong stand of seedlings and a disappointing one.

In the final video of our soil health series, Paul breaks down the three things every WNC garden needs to keep soil biology thriving long after the growing season winds down. First, protect what’s already living below the surface, since healthy soil is full of fungi and bacteria doing work you can’t see but absolutely rely on. Second, preserve that biology by mulching, which insulates the soil, retains moisture, and keeps those microorganisms active instead of exposed and stressed. Third, replenish it with compost, feeding the biology that feeds your plants so next season starts stronger than this one ended.
Healthy soil isn’t a one-time fix, it’s an ongoing relationship, and Paul’s covered the fundamentals to keep that relationship going through fall and into next spring.
